Vegan banana bread recipe

Ingredients: 2 ripe bananas, 60ml neutral oil (I use canola oil), 100 ml soy milk, 100ml maple syrup, 180g whole wheat flour, 1 teaspoon baking powder

Preheat oven to 175 degrees Celcius
1. In a big bowl mash the bananas and add in oil, milk and maple syrup.
2. In an other, smaller bowl mix flour and baking powder. Then stir the dry ingredients into the wet ones.
3. Grease a baking dish, pour in the batter and bake for 35 minutes.
4. Take it out of the oven, let cool down for some minutes and remove it from the baking dish.

Substitutions: whole wheat flour - normal flour, maple syrup - agave nectar or brown sugar, soy milk - any other milk you like

1 teaspoon Baking Powder (1/4 teaspoon high altitude)
1/2 teaspoon fine Sea Salt
1 teaspoon ground Cinnamon
1/2 cup (130 g) natural Peanut Butter (smooth or crunchy)
4 cups (960 ml) unsweetened Vanilla Almond Milk
1 can (450 ml) unsweetened Light Coconut Milk
2-3 droppers full Vanilla Stevia Drops
Cooking Spray
Toppings:Berries
Chopped Peanuts
Fruity Jam (I like fruit-sweetened raspberry)

Sprinkle granola evenly on bottom of pan and set aside.
In a blender, whirl together berries, yogurt, agave nectar and vanilla until blended. Pour berry mixture over granola, smoothing mixture to the edges of the pan. Cover with foil and freeze until firm, approximately 4 hours. Keep frozen until serving.

Chocolate Banana Pancakes!


Makes 18 servings, 32 calories per serving :)

Although keep in mind, each pancake is pretty small (around 3 inches)

Ingredients:

3/4 cup of Flour

3/4 cup of Skim/Non-fat Milk

2 Egg whites

2 Tbsp of Cocoa (I used Meijers hot cocoa mix which is 36 cals per tbsp!)

2 tbsp of baking powder

1 dash of Salt

1/2 medium Banana

Directions:

1. In a large bowl, mix the flour, egg whites, baking powder, milk, salt and cocoa until smooth

2. Slice the 1/2 a banana into small slices

3. Heat the griddle or frying pan on low heat. (If you decide to use oil, add those calories, I use cooking spray!)

4. Pour or scoop the batter onto the griddle or pan, use approximately a tablespoon of batter for each pancake. 

5. Add banana slices onto the pancakes as they cook.

6. Brown on both sides and serve hot.

Green Smoothie - 1 cup baby spinach, 1 cup kale, 1 pear, 1 ½ cup of orange juice, and 1 frozen banana.

Chocolate Peanut Butter – 2 TBL unsweetened cocoa powder, 2 TBL peanut butter, ½ banana, 1 cup almond milk, ice.

Mango Ginger — 2 cups frozen Mango, 1 cup frozen raspberries, 1 banana, ¼ cup chopped ginger, squeeze of lime, yogurt.

Strawberry Date — 1 date, 1 ½ cup frozen strawberries, 1 cup almond milk. Optional: 1 scoop protein powder or 1 TBL of flaxseed oil.

Okay so first thing I did, when I found the recipe for oat banana pancakes was running to the kitchen to see if we still got bananas :) We did, so I made them and they’re delicious, so I sdesided to share the recipe :)
What You need are:
2 bananas
2 teaspoons of baking powder
2 eggs (make them vegan by adding flaxseed and water)
pinch of salt
6tablespoons of milk (I used the 0% one)
1 cup of oats
1/2 cup of whole wheat flour
if you like it sweet- 3 tablespoons of brown sugar, i used 2 and they’re still very sweet :) also you can replace it with honey
a bit of olive oil but not very much
Stir bananas and add the baking powder. Then add the salt and sugar and then eggs, milk, oil, oats and flour. It should be thick so you can add a bit more flour or oats. 
The most important thing- ADD SOME BUTTER TO FRY IT! at least a little bit, it will burn without it.
Be carefull and don’t fry them for too long and yeah that’s it :) I hope you’re gonna like them!
